Italian Breakfast Casserole |
Besides now having an in-depth knowledge of bizarre pasta shapes, I have learned wonderful recipes from my Italian mother-in-law. This is one of my favorites. |
| Ingredients |
- 1 pound bulk pork sausage, cooked and drained
- 1 1/2 cups sliced mushrooms (4 ounces)
- 8 medium green onions, sliced (1/2 cup)
- 2 medium tomatoes, chopped (1 1/2 cups)
- 2 cups shredded mozzarella cheese (8 ounces)
- 1 1/4 cups Bisquick Original baking mix
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 teaspoons chopped fresh oregano or 1/2 teaspoon
dried oregano leaves
- 12 eggs

Instructions |
- Heat oven to 350 degrees.
- Grease rectangular baking dish, 13 x 9 x 2 inches.
- Layer sausage, mushrooms, onions, tomatoes and cheese
in dish.
- Stir remaining ingredients until blended. Pour over
cheese.
- Bake uncovered about 30 to 35 minutes or until golden
brown and set.
- Test by inserting a toothpick into the center. If it
comes out clean, it should be done.
