In time for the Olympic spirit, Greek Tomatoes can be a
real treat and went well (in North America) with Labor Day
grilling. |
| Ingredients |
- 2 tablespoons of olive oil (Greek Olive Oil, if you
please)
- 1 small diced onion
- 2 cups of chopped cooked spinach
- 2 teaspoons of dried basil
- 1/2 cup of bread crumbs
- 1 medium egg
- 1/2 pound (lbs) of crumbled feta cheese
- Salt (to taste)
- Pepper (to taste)
- 6 firm tomatoes with insides scooped out

| Cooking
Instructions |
- In a saucepan, heat the olive oil and sauté the onion
until translucent (NOT caramelized).
- In a bowl, combine the sautéed onions with all remaining
ingredients except for the tomatoes.
- Stuff the mixture (filling) into the tomatoes skins.
- Bake in a preheated oven (preheated to 350 degrees F)
for 15 minutes.
