Greek Tomatoes
Greek Tomatoes In time for the Olympic spirit, Greek Tomatoes can be a real treat and went well (in North America) with Labor Day grilling.
Ingredients
  • 2 tablespoons of olive oil (Greek Olive Oil, if you please)
  • 1 small diced onion
  • 2 cups of chopped cooked spinach
  • 2 teaspoons of dried basil
  • 1/2 cup of bread crumbs
  • 1 medium egg
  • 1/2 pound (lbs) of crumbled feta cheese
  • Salt (to taste)
  • Pepper (to taste)
  • 6 firm tomatoes with insides scooped out
Cooking Instructions
  • In a saucepan, heat the olive oil and sauté the onion until translucent (NOT caramelized).
  • In a bowl, combine the sautéed onions with all remaining ingredients except for the tomatoes.
  • Stuff the mixture (filling) into the tomatoes skins.
  • Bake in a preheated oven (preheated to 350 degrees F) for 15 minutes.
Comments Serves 4 to 6 people.
