Honeydew Heaven (Ginger and Honeydew Granita)
Honeydew Heaven (Ginger and Honeydew Granita) Honeydew Heaven is very easy to make. A great alternative to ice cream on a hot day. Serve it as a dessert, a palate cleanser or a refreshing snack.
Ingredients
  • 3.5 ounces (100 g) sugar
  • 5 ounces (150 ml) water
  • 1 honeydew melon
  • 2 inch (5 cm) piece of ginger
Cooking Instructions
  • Place sugar and water in a small pan and heat gently, stirring until the sugar has completely dissolved.
  • Remove from the heat and cool, then chill.
  • Cut the melon into quarters and scoop out the seeds.  Cut away the skin too.
  • Cube the the melon and place in a blender. Peel the ginger and grate it finely.  Add the grated ginger to the melon in the blender.
  • Blend until smooth.
  • Mix the chilled syrup (sugar water) with the melon purée in the blender.
  • Put the mixture into a shallow container in the freezer and stir occasionally (about every 30 minutes or so) to break up the forming crystals.
  • Tip: Don't stir too hard.  You want the mixture to have somewhat of a coarse, granular texture.
  • After about 3 hours, the granita should be an appealing batch of uniform crystals.
  • Serve in well-chilled glasses.
