Baltimore Peach Cake
Baltimore Peach Cake Kentucky may have Peach Bread, but Baltimore has Peach Cake. You absolutely must try it!  And yes to J. Alfred Prufrock, dare to eat the peach!  Roll those trousers up and listen to the mermaids singing!
Ingredients
  • 1 tablespoon butter, softened
  • 1 cup sugar
  • 2 1/2 cup flour
  • 3 teaspoon baking Powder
  • 1 1/2 cups milk
  • 3/4 cup sugar, mixed with . . .
    2 teaspoon cinnamon
  • 5 Large peaches, peeled/sliced
  • 2 tablespoon butter, melted
Cooking Instructions
  • Preheat oven to 350.
  • With electric mixer, blend first five ingredients.
  • Spread in greased and floured 15" x 10" jelly roll pan (or 13" x 9" plus one 8" cake pan).
  • Sprinkle half of the cinnamon/sugar mixture lightly over the dough base.
  • Arrange peach slices by rows on top of base.
  • Sprinkle with remainder of the cinnamon/sugar mixture and drizzle melted butter over all.
  • Bake for 25-30 minutes.
  • Tip: For thicker dough, don't use the 8" cake pan, just stick to the 13" x 9" pan.
Comments Serves about six.
