Armadillo Eggs |
If you ever do get a chance to eat an armadillo, the meat is
said to taste like fine-grained, high-quality pork. Just
thought you would want to know. |
| Ingredients |
- 1 lb. Pork Sausage (spicy)
- 1/2 lb. Sharp Cheddar Cheese
- 1 1/2 Cup Bisquick Baking Mix
- 1 Cup Italian Seasoned Bread Crumbs
- 1 Egg (beaten)
- 2 Tablespoon Water
- 15 - 20 Fresh Whole Jalapeno Pepper (stemmed and seeds
removed, sliced, jalapeno 1 1/4" in length)
- 1/8 to 1/4 Cup of Water (sausage mixture)

Instructions |
- Slice cheese and place inside of jalapeno pieces.
- Mix sausage, Bisquick and little water to make sausage
workable and soft enough to mold.
- Wrap sausage mixture around stuffed jalapeno, shape in a
ball. The ball should measure 1 1/2" in diameter.
- Mix egg with 2 Tbs. water, blend well. Place armadillo egg
in egg mixture and roll in seasoned bread crumbs.
- Place eggs on greased baking sheet and bake in a 350 degrees
preheated oven for 25 minutes or until crisp.
- Serve warm with ranch or blue cheese dressing.
