Oven Roasted Wild Pig
Oven Roasted Wild Pig I'll admit that nowadays folks don't butcher a hog when the kinfolks come over.  But if you should ever want to revive that traditional, the first thing you gotta do is catch you a hog.  Then, just follow this recipe.
Ingredients
  • 1 Pork shoulder or butt roast
  • 1 16oz can crushed pineapple in syrup
  • 1 teaspoon salt
  • ¼ teaspoon oregano
  • ¼ teaspoon pepper
  • Dash of white pepper
Cooking Instructions
  • Trim off as much fat as you can. Rub salt, pepper and oregano into the meat with your hands (have fun with it).
  • Place the meat into a large roasting bag. Pour the can of pineapple over the meat, juice and all. Remove as much air from the bag and you can and seal.
  • Wrap the meat several times with aluminum foil. It is important that it is sealed completely.
  • Place the meat in a oven roasting pan, cover and cook at 200 degrees for 8-10 hours.
  • Let stand for 10 minutes and serve.
Comments Serves 6 people or just 4 if they are pigs (pardon the pun).
