I highly recommend you sing (loudly) the Banana Boat song
while preparing this dish. (Note: The "Banana Boat" song is actually titled
"Day Oh" and was originally sung [supposedly] by the slaves working in the
banana orchards. It was popularized by Harry Bellefonte in the late 1950s.) |
| Ingredients |
- 4 tablespoons butter
- 1 teaspoon of grated lemon rind
- 1 tablespoon of lemon juice
- 4 firm, ripe bananas
- 4 tablespoons of dark brown sugar

Instructions |
- Preheat the oven to 350 F. But the butter, lemon rind and lemon juice in a baking dish and
place it in the oven for 2 to 3 minutes, just long enough to melt the butter; remove and
stir.
- Peel the bananas and put them in the baking dish, turning so they are coated with the butter
mixture. Sprinkle the brown sugar over them and bake for 15 minutes.

Serve while hot with heavy cream (if you like). One banana
per person should do it. |
